For my husband’s birthday I decided to make a healthy SW Indian meal instead of just ordering a takeaway, especially as a few of us are trying to eat healthy. So now was the time to use my SW Cook books instead of looking at the pictures! I decided on Chicken Tikka Masala especially as this is everyone’s favorite plus a few vegetarian meals.  

I spent the day preparing the food as the tikka had to marinate for a few hours and then sauces had to be made ready for the next day. I made a King Prawn dopiaz, marrow fat pea curry & chickpea dahl and a few shop bought poppadoms and Nann bread, which obviously I had to eat (flexible syns). New Year’s Eve fun at the boat club, fabulous food to tantalise me and plenty of it. Tempting desserts of homemade apple pie with fresh cream and yummy cheesecake which obviously I had to taste, more than once! Everyone bought a plate of food to share so I decided to make something healthy and slimming.  Mini quiches, SW recipe – so easy to make and totally syn free.

Christmas celebrations in January! At long last I was able to squeeze into my little black dress along with my high heels to enjoy an amazing night with my work colleagues.  Our first port of call being the Swanky Ritz Hotel where I downed a few cocktails (and calories) followed by dinner, drinks and dancing at the club Quaglino’s.  The calories in this fabulous dessert were worth every single delicious mouthful and more!

Today is my birthday and I was taken to an amazing little place called Fanny-Annie’s in Buckhurst Hill – a very quaint tea shop! And much to my surprise my daughter had organised champagne to be served with my breakfast of Eggs Benedict.  So obviously I am having a flexible syns day!

This is one of my all time favourites and can be eaten hot or cold. I love it with a crunchy salad or beans and SW chips! Best of all, it is low calorie or syn free on SW. Great for snacking on! The mixture can be made into bite size mini quiches using a muffin tray. I use the silicon cases which are great for this.

Oh boy! What a night! Great evening with my girlfriends, drinking and eating.  I started off well, taking into account every glass of wine, thought I would use flexible Syns so I could stay in control. Food was so delicious, thanks to Carol’s cooking. Chicken curry, rice, popadoms & relish etc. But after the cork popped out of the third bottle of wine, it was too late to even think about counting Syns!!

When are you going to start your blog I’m asked for the millionth time, well here goes …

My blog is about food, trying new recipes and ideas from other like minded people and sharing them through my love of #insta.  I always have my phone in my hand ready for the next shot – obsessive you may say! But it keeps me sane and is also a hobby.

My weekends are always full and usually involves over eating and drinking but I believe in enjoying life to the full (well, full up that is). I belong to a boat club so there is always something going on most weekends even in the winter months . The summer months are the easiest with all the scrummy salads and BBQ food, so eating the right food, whether it is a lot or in moderation is ok, as healthy eating not only helps you lose weight it also keeps your heart and mind healthy, because after all, life is to be enjoyed isn’t it!

I hope by sharing my recipes i will push myself to stick to a healthy eating plan and hopefully it will help other like minded people on their journey.

Because after all no food is forbidden it is just knowing how much to eat of it! A little of what you fancy will also stop me from giving up on this healthy life style, so I will have that square of chocolate if i want, I am taking the scenic route with a few stops on the way, just take longer to get there!  Believing in myself is the key and seeing the results in my clothes, skin, hair etc etc means I will carry on with this journey.
