I have always followed Slimming World’s healthy eating for years but feel I desperately need to change the way I look at food and start to add healthy fats to my eating plan! No more low fat yogurt, low fat cheese! Food with all the goodness taken out, need I go on?

Change is good they say, well let’s see. Obviously I will still attend my SW group as I do need the support of others and plus I like to be weighed on a weekly basis, it just keeps me on track. I’m not saying I’m going to start stuffing my face with cakes and chocolates, I can still be sensible but just to add a little bit more variety to my life! I need change!

I’m going to sign up for a yoga course and also start to meditate as I hear it’s good for your wellbeing. I’ve bought some earphones and down loaded an app called ‘insight timer’ and I can honestly say you can space out on it. Who needs alcohol and fags! Well, let’s not give everything up hey! Just little things in moderation to improve my body and soul. Don’t worry, I am not about to start chanting and preaching to everyone! I would have no friends left. I’m a party animal! I need my friends!!

I am going to update my blog on a regular basis and write about places I’ve eaten in and boy, have I eaten in a lot of places! I’m always being told, you are always out, perhaps I just brag about it more as I always love to update my Facebook page!

I have made baked oats many times and have tried endless recipes but now I can honestly say, this is one of the best! I  can now actually have my cake and eat it. You can use this for your pancakes too, just add fruit.

40g oats

2 eggs

1 heaped tbsp quark

Vanilla essence or skinny syrup

Mix together and bake 180 degrees- 30 mins

Wow! What can I say! SW Woman of the Year. To say that I’m completely blown away by this award is an understatement.

After weigh in I stayed on for IMAGE Therapy (a motivational class attended by SW members lead by a SW consultant, Celina).  We all had to vote for a member who was worthy of this award, little did I know I was one of the nominees.  I then had to speak about myself – basically the SW equivalent of the 1st round of The X Factor and convince them I was worthy of this award.  Spoiler alert: I won.

I couldn’t have done this on my own without the support of Slimming World and all its lovely members! An amazing eating plan, with great recipes and a fabulous support network.

So here I am looking for inspiration for dinner tonight with my Slimming World recipe books, magazines, iPad etc all over the table. I’m flicking through page after page of mouth watering dishes. It’s so hard to decide! Eventually I chose to make the Moroccan chicken – I’ve had this before so I know it is a tried and tested dish. It is so easy to make using spices from my cupboard, which I have to confess are quite a few!

For this I have used courgettes, red onion, red peppers and sweet potato. But any vegetables will taste good with this dish, so fill your boots! 

 

Moroccan chicken

Ingredients
  1. 1 tsp ground cinnamon
  2. 2 tsp ground cumin
  3. 2 tbsp red wine vinegar
  4. Chicken
  5. Veg
  6. Couscous
Instructions
  1. Mix the red wine vinegar, cinnamon and cumin together and marinate the chicken
  2. Add to an oven-proof dish and cook at 180c for 35 minutes (or when cooked)

A confession:  I’ve never owned a pair of trainers. I now own 3 pairs. And I regularly attend Zumba classes. WHO AM I.

I cannot believe how good it feels after a Zumba workout 💃 hot, sweaty and knackered but exhilarating. I have always felt embarrassed prancing around in front of people, scared of not being able to follow the dance moves, people looking at me but hey, guess what, I love it.

Zumba is a great place to make new friends, have a laugh and most importantly, lose weight.  Bring on the next class!
